Introduction

Grasas y Aceites is a peer-reviewed, open-access scientific journal published quarterly by Spain’s CSIC through the Instituto de la Grasa. Launched in 1950 and online since 2007, it covers original research, notes, reviews, patents, and book information in the broad field of lipids—particularly edible fats and oils, including microbial lipids—relevant to food science, chemistry, biology, nutrition, engineering, and biotechnology.
